Costa Rica Papas Chorreadas Recipe

Hi Rene, here's what we found.. This is a great side of potatoes, which is excellent with grilled or roasted meat or seafood. A Costa Rica favorite. Let us know how you like it!

30 min 30 min prep / 4 - 6 servings

6 medium red potatoes, scrubbed but not peeled
1tablespoon vegetable oil
1 medium white onion, thinly sliced
1 tomato, peeled, seeded, chopped
1 teaspoon paprika
1/4 lb queso blanco, crumbled

salt & freshly ground black pepper

  1. Boil the whole potatoes in lightly salted water for about twenty minutes.
  2. Meanwhile, heat the oil in a skillet over medium high heat and sauté the onion and tomato, stirring often, for about 15 minutes or until the onion is very soft.
  3. Season with paprika and pepper.
  4. Remove from heat; add cheese, stir well.
  5. Halve the potatoes and serve with the onion/cheese sauce.
