This Costa Rican Mango Desert is refreshing, light and can be prepared days ahead.
Serves 4 to 6
- 3 cups of ripe mango, liquefied and filtered
- 1 cup of sweet cream
- 4 medium-size eggs
- 3 teaspoons of non-flavor gelatin
- 1 cup of sugar
Stir the egg white, slowly add the yokes and sugar while stirring. Meanwhile dilute the gelatin in 1/4 of hot water. In another bowl, mix the mango juice, the sweet cream and the gelatin. Gently stir in fruit to egg mixture. Pour it in a mould and freeze for several hours. Garnish with mint leaves if desired.
