This crunchy Costa Rican fish dish can be prepared with pecans, macadamia nuts or the nut of your choice!
- 1 egg
- 1 cup milk
- salt to taste
- 4 (1/2 inch thick) salmon steaks
- 6 1/2 ounces Pecan nuts
- 1/2 cup flour
- 1/2 cube margarine
Cut salmon into steaks or filets, remove fat and skin. Finely crush pecans with rolling pin in paper and mix with flour. Beat eggs to a froth, add milk. Dip fish into egg, coat with macadamia and flour mixture. Cook in margarine over low heat until dark golden brown.
