Costa Rica Chimichurri Recipe
Although known as an Argentinean Recipe, this Costa Rican Version is delicious. You can mince the ingredients by hand or use a food processor for a creamier consistency. There are many variations on this condiment, and it is served with everything from chicken, empanadas to grilled steak.
1 cup fresh chopped parsley 1 cup fresh chopped cilantro 1/3 teaspoon black pepper, freshly ground (or more to taste) 6 cloves garlic, fresh, minced (or more to taste)1/2 olive oil (use the extra virgin here; you want the flavor) 1-2 Tbs. apple cider vinegar pinch of salt
Mince the herbs and garlic till desired consistency. Combine all ingredients and let set for at least 2 hours before serving or can refrigerate this until dinner is served!
Use to baste steak while grilling or serve as a side dish.
